Recipe: Mixed berry cobbler
There's nothing like the flavour of these perfect fruits to bring to mind lazy sunshiny afternoons outdoors. To evoke that pure sensory pleasure, we're featuring an old-fashioned cobbler that gets the experience just right.
Ingredients
4 cups fresh mixed berries, washed and hulled1/2 cup granulated sugar, divided2 tsp good-quality balsamic vinegar2 tsp cornstarch1/2 cup all-purpose flour1/2 tsp baking powder1/4 tsp kosher salt2 tbsp unsalted butter, cubed1/4 cup buttermilkFresh mint leaves, for garnishVanilla ice cream, for serving
Directions
1 Preheat the oven to 375?F.
2 In a large bowl, combine the berries, 1/4 cup sugar, balsamic vinegar and cornstarch.
3 Divide the mixture evenly among four 1-cup ovenproof baking dishes (we used individual cast-iron frying pans).
4 Whisk together the flour, remaining sugar, baking powder and salt in a medium bowl.
5 Using your fingers, work the butter into the flour mixture to form a coarse meal.
6 Add the buttermilk, stirring until the mixture forms a thick batter.
7 Drop small spoonfuls of the batter onto the berries in the baking dishes.
8 Place the dishes on a parchment paper-lined rimmed baking sheet and bake for 25 to 30 minutes, until the topping is golden brown and the filling is bubbly around the edges.
9 Garnish with the mint leaves and serve warm with the ice cream.
